Ardelon · Birthdays

Mærven

Ardelon’s cake with a crisp crust.

The crust is broken with a bare hand.

The first break

The first break belongs to the person whose birthday the household is celebrating. They press directly on the crust with their palm until it cracks.

The dry crack can be heard all around the table. Only then is the knife handed over.

Honey, cheese and plums between thin cake layers.

Beneath the crisp crust

Thin cake layers made with toasted flour are filled with fresh cheese mixed with honey and a thick prune paste. The assembled cake rests overnight under a board, allowing the filling to soften the layers.

The crisp top is baked separately and added just before serving.

Each portion is served with a shard of crust. Beneath it are soft cheese, moist cake and the sweet tang of plums.
